Baba Ganoush is one of those rare recipes that’s incredibly healthy without having to make any adjustments.
Why shrimp falafel? Well, I ended up having to wait to make falafels for a variety of reasons, (raw) shrimp was on sale, and so I was able to add an extra 1.25 ounces to each patty (3 ounces total) while keeping it at 0. That, and shrimp are AWESOME.
NOTE: using canned chickpeas will result in a denser texture than using fresh ones.
This bowl of goodness isn’t just a looker: you can legitimately claim that it’s good for you! The points change depending on how much honey you add. I did consider using Swerve, that little bit of witchcraft I recently discovered, but I settled on a recipe that anyone could make.
After making it with 2 teaspoons of honey, I find it I like it better with 4. This changes the point value from 0 to 1, and 1 point is never a bad thing.
@dunniedad: a sherbet has a milk component. I’ve made a crazy amount of ice creams and gelatos – pre WW – but this is the first frozen treat I don’t have to feel guilty about eating.

This is what I ended up making with a good portion of that box on the left. The great thing about making a barbecue sauce is that there’s a lot of variability, and a lot of room for you to get creative. Change the type of pepper. Use a different kind of mustard or vinegar. Throw some garlic in there. Explore!
I substituted a lot of the heavy ingredients you normally have in barbecue sauce with lighter things, and it’s delicious. This also works with blackberries, though you will have a bit of a crunch from the blackberry seeds.
Once I figured out how to make these myself, I stopped buying sun-dried tomatoes. At my local fruit and vegetable market, I can get a 10 ounce container of cherry tomatoes for less than a dollar. For a few pennies more, I can make something just as good as sun-dried tomatoes, for a fraction of the cost (and the calories!)
And, it’s not hard to do. As the ingredients list shows, please get creative with your seasoning. You can have perfectly good oven dried tomatoes with just salt, but consider adding Cajun seasoning, garlic powder, sumac…whatever you try, it will probably be great!
